    Default Question About Amish Friendship Bread

    i've been reading back through some of the old threads looking for some new reciepes to try. There is one for an Amish Friendship Bread starter. I remember someone giving me a starter years ago and was it ever yummy!!!!

    The question: As the days pass and you're stirring the milk, sugar, yeast mix...does it stay in the fridge or does it stay out at room temp.????? I figure if it was suppose to go in the fridge it would have said so.....then again it's got milk in it so maybe it's suppose to be a given???

    I believe it stays out on the counter top at room temperature.

    What a coincidence! I just hit day 10 and baked mine this morning! It stays out on the counter and the lid has to be cracked.....not tightly closed.

    I have always done mine in ziploc baggies sitting on the counter top.

    I did mine in a big heavy weight class jar. Wan to know what happend????
    Crack! Boom! Spoosh! The pressure built-up and exploded all over the counter.

    bumping the thread...

    Because I just got my starter going!

    He is named Beagan which is Irish Gaelic for the little one. I am hoping to keep him around for quite some time.

    I am keeping Beagan on the counter in a heavy glass pickle jar (pickles have since been eaten) and he is covered with a coffee filter held by a rubber band.

    I don't expect my friends will be wanting a cup of starter too often and I am wondering if I can reduce the feedings to 1/2 cup or even 1/4 cup measures so I don't have 4 cups of starter every 10 days? Has anyone one else tried to reduce the starter to keep it going but not producing as much?

    I have read some information on refridgerating it as well.... any opinions?

    I have had some going for quite some time. I hardly ever give it out (friends get tired of it really quick) - but I love it. I don't know about reduce the feeder, but I came across a site with tons of recipes. I especially love making the pancakes or waffles, because it uses up two cups of the day 10 starter - heres the site:

    I read somewhere also, that it can be frozen on day 10 (after it's divided by thirds). I'm going to try it. Also, as far as the metal instruments go . . . I'd like to try a "poundcake pan" (not a bundt pan, but similar). Has any one ever used a metal baking pan? Is the metal issue just an urban legend? Thanks!

    I'm going to be giving out starters to all my family members during the holiday's. My family has been asking for someone to start this so I think I'll be the one to do it!

    YEs, I've use a metal bread pan, and it workied just fine. It is supposed to be at room temperature and it is fairly important not to seal it - it has to have room to blow off whatever stem/gasses/etc form during its "growing period" hence the exploded glass jar, covering a jar with cheesecloth or a coffee filter would work fine, putting a lid on it would not. I'm surprised the Zip-loc bags don't blow up - are you venting them occasionally?

    I have a friend who will be giving me some starter soon, so I read that page with interest!

    I have a question about
    Day 10:
    Add 1 cup flour, 1 cup sugar and 1 cup milk. Stir. Take out 3 cups and place 1 cup each into three separate plastic containers. Give one cup and a copy of this recipe to three friends. To the balance (a little over one cup) of the batter, add the following ingredients and mix well.
    After you take out three cups and place them in separate plastic containers, shouldn't you only give 2 away and keep 1? Cause you are using the rest of the starter to make actual bread, right?
