PB&J muffins
Peanut Butter & Jelly Muffins
Kathy's Country Retreat Bed & Breakfast
Belleville, Michigan
1 1/2 cup all purpose flour
1 cup Oats (quick or old fashion)
1/2 cup firmly packed brown sugar
2 tablespoons baking powder
1/4 teaspoon salt (optional)
1 cup milk
4 tablespoons margarine or butter melted
1 egg lightly beaten
1 tablespoon vanilla
1/2 cup jelly flavor your choice (grape)
Topping
1/3 cup Oats
1/4 cup all purpose flour
2 tablespoons firmly packed brown sugar
1/3 cup peanut butter
1 tablespoon margarine or butter melted
To make topping combine oats, flour and brown sugar in a small bowl. Cut in peanut butter and margarine with 2 knives or finger tips until crumbly and set aside. To make muffins combine oats, brown sugar, baking powder and salt in large bowl. Mix well. In small bowl combine milk, melted margarine, egg and vanilla, blend well. Add to dry ingredients all at once. Stir until dry ingredients are moistened. Do not over mix. Pour into papered muffin tin.
Spoon jelly over top of muffins. Sprinkle crumble topping over top of muffins. Bake in preheated oven at 350 degrees for 35 to 40 minutes.
