Strawberry Spinach Salad

This is one of my very favorite recipes ever and I love it when strawberry season arrives. I made this salad in the picture with raspberry balsamic vinegar instead of just plain raspberry vinegar. I like them both but it looks prettier with just the plain raspberry vinegar. I never add the sliced almonds ~ just personal preference. I first found this recipe in a junior league cookbook (Very Virginia, I think) but have since seen it all over the internet.

Green Onion Potato Casserole

This is one of my favorite potato recipes. The original recipe says to grate the cooked potatoes but I just run them through a potato ricer and I don’t see why you couldn’t just give them a rough mash. Grating hot, cooked potatoes is not fun. I think the recipe came from the cookbook Applehood and Motherpie via my Mom.

Green Onion Potato Casserole

6 medium potatoes
1 teaspoon salt
1 cup sour cream
6-8 green onions, chopped with some greens...

Rotisserie Chicken on the Grill

Here is how I make rotisserie chicken on the grill:

About 5 or 6 hours before starting the grill, I clean a 4 or 5 pound chicken. In my experience, a chicken bigger than that takes too long to cook. I've done two smaller chickens at the same time and that worked great, too. Game hens would also work well.

Back to the cleaned and dried chicken...at this point I either use a rub or a marinade. In the pictures, I used a rub ~ just one I picked up at the grocery store....

Oven Roasted Garlic Potatoes

Confession time ~ I LOVE FRENCH FRIES! Can’t help it, I love them. I can’t eat them much anymore with this hinky gall bladder so I am always on the lookout for a decent recipe for a potato dish to take their place. I found one on allrecipes that sounded good so I adapted it to my likes. These are really good ~ give them a try.

Oven Roasted Garlic Potatoes


2 lbs red potatoes, quartered
1/4 cup butter, melted
2 tsps minced garlic
1 tsp salt...

Bourbon steak, baked potatoes, veg, salad
Barbecue-y short ribs, garlic mashed, veg, salad
Beef stew with cognac and horseradish, jalapeno cornbread
Roast beef with horseradish gravy, mashed potatoes, Greek salad, hm rolls, Key lime pie ~ we are having company for dinner
Baked rotini, salad, garlic bread
Balsamic chicken with thyme, rice, veg
Tavern Soup, salad, bread
