So another week has flown by, wow, where is March going??
I have continued to stay veg. this entire week, so I'm feeling better about that.
I've noticed it helps to have some easy, quick fall-back items on hand (veg. burgers & chik'n patties, hummus, fresh veggies, etc.)
so that if I need to grab something quick for lunch I don't have to worry about preparing something very time consuming.
I don't want to give the impression that cooking veg. is time-consuming, ...
