Lasagna Spirals (OAMC)

This is one of this instances where the shot looked much better in the viewfinder But, I'm still posting it because it represents my 3rd OAMC recipe, <a href="http://www.recipezaar.com/181318">Lasagna Spirals</a>. It's also the 3rd one that I added straight to my <a href="http://vigilant20.wordpress.com/meal-ideas/" target="_blank">list of favorites</a> to make again! I'm glad that I went with these individual spirals, they didn't take...

Lentil Soup for People Who Thought They Hated Lentils

Here's the second vegetarian OAMC recipe I decided to try, Lentil Soup for People Who Thought They Hated Lentils. This is so packed full of lentils and veggies I had to add a good 3 or 4 cups more broth than specified. The recipe calls for quite a bit of chopping, but it's worth the effort. I got a total of 15 one cup servings out of tonight's efforts.

P.S. I'm a few days behind posting, so I've already had one of my frozen meals for lunch. It was sooooooo good! I just added...

Granny's Slow Cooker Vegetarian Chili

In one of my attempts to be more frugal, I'm trying some OAMC (once a month cooking) recipes. This is the first one I decided on. Granny's Slow Cooker Vegetarian Chili. Making this was a little scary, as I've never had chili before so I wasn't sure I'd like it. And when I started cooking I thought I did something horribly wrong, because it started out as a dry heap of beans. Counter-intuitively it got more soupy as it cooked.

I only have a 2 quart crock, so I made on the stove...

After 21 days, I think my bento making is officially part of my flylady routines

4 crackers
1 oz lowfat cheddar flowers
1.5 oz trail mix
3 oz grapes
1.5 oz baby carrots
1 oz sugar snap peas
4 teaspoons kraft free ranch (split between 2 containers)

436 calories, 18g fat, 57g carbs, 16g protein

The bento making has been going really well. They keep looking more colorful (with fruits and veggies) and my grocery bill keeps shrinking, so I think I'm getting the hang of it.

Peanut butter and jelly bite sized stars
1 oz cheddar flowers
3 oz grapes
2 oz baby carrots
1 oz snow peas
6 oz orange juice

490 calories, 18g fat, 71g carbs, 16g protein
