Here's the second vegetarian OAMC recipe I decided to try, Lentil Soup for People Who Thought They Hated Lentils. This is so packed full of lentils and veggies I had to add a good 3 or 4 cups more broth than specified. The recipe calls for quite a bit of chopping, but it's worth the effort.
