Granny's Slow Cooker Vegetarian Chili

In one of my attempts to be more frugal, I'm trying some OAMC (once a month cooking) recipes. This is the first one I decided on. Granny's Slow Cooker Vegetarian Chili. Making this was a little scary, as I've never had chili before so I wasn't sure I'd like it. And when I started cooking I thought I did something horribly wrong, because it started out as a dry heap of beans. Counter-intuitively it got more soupy as it cooked.

I only have a 2 quart crock, so I made on the stove (it filled my biggest pot to the top!). I only left out a few things I don't normally care for...bell peppers, chilies, jalapeno, and chili powder. The recipe looks dreadful because there are so many lines, but it was as easy as sauteing 3 veggies, dumping in 6 cans, and spicing.

I used up all my tupperware storing this, so I will definitely need to invest in more in order to finish all the recipes I have scheduled for this week!
