Here's the second vegetarian OAMC recipe I decided to try, Lentil Soup for People Who Thought They Hated Lentils. This is so packed full of lentils and veggies I had to add a good 3 or 4 cups more broth than specified. The recipe calls for quite a bit of chopping, but it's worth the effort. I got a total of 15 one cup servings out of tonight's efforts.
P.S. I'm a few days behind posting, so I've already had one of my frozen meals for lunch. It was sooooooo good! I just added another splash of liquid when cooking because it had thickened up a bit more.
