Rolled Dumplings
Mix flour and salt.
Cut in cold butter with a pastry blender until it resembles coarse crumbs.
Stir in ice water.
Turn onto well floured surface and knead 10-12 times, adding flour, until the dough loses some stickiness and can be rolled.
Roll out thin(about a saltine cracker)with a well floured rolling pin. Don't be afraid of too much flour. It actually helps to use a lot because it will thicken your broth.
Use a pizza cutter to cut the dough into squares.
Drop squares one by one into simmering broth.
Simmer gently in uncovered pot for 20 minutes, counting from last dumpling addition. Be careful not to boil the dumplings as this can cause them to break apart or disintegrate!
When making Chicken and Dumplings I stir in the shredded chicken after the dumplings have cooked.
