quick flour tortillas
Mix flour and salt in a bowl. Blend in shortening. Mixture should have a cornmeal texture.
Add water and stir until it forms a ball.
Divide the dough into 8 equal portions ( divide by pinching the ball in half. then each ball in half again until you have eight)
Roll each ball out on a lightly floured surface until 7 inches in diameter
Cook on a lightly greased griddle or skillet. about 350 degrees. This felt like cooking pancakes to me. Flip until cooked. No particular time.
Don't worry if they end up being crisp. They will soften up if they are steamed or moistened. we do this with store bought ones also ( place on a paper towel in microwave cover with a damp paper towel. microwave a few seconds ( up to 10)"Everyday as your walking down the street, everybody that you met has an original point of view" -Arthur PBS

Make sure you put the tortilla between the dry paper towel and the wet one. I think I left that out of the instructions. My mom bright back frok Mexico was fabric thing that the ladies put the tortilla in and them kept them in on the table I have not given it a try the microwave trick works well for us.
