    Applesauce Pancakes

    Recipe Description
    A hearty, low-fat flapjack made with wheat flour and applesauce.
    Preparation Steps:Level of Difficulty:
    Time Needed:Ingredients:
    3/4 cup white flour
    1/2 cup wheat flour
    2 TB sugar
    1/3 cup dry milk
    1 egg
    3 TB applesauce
    1 TB canola oil
    1 cup apple juice
    (or juice and dry milk can be replaced with 1 cup skim milk)
    2 pancakes
    Combine dry ingredients in a mixing bowl. In a separate bowl, whisk together wet ingredients. Combine and stir. Heat electric fry pan or griddle at about 225* and lightly spray with cooking spray. Pour circles of 1/4 cups of batter onto hot griddle. Adjust heat if necessary. Flip when bubbles appear on the surface. Serve with light syrup and fresh fruit. Makes 12. These freeze and reheat perfectly!
