Flourless Oatmeal Pancakes

Recipe Description

Came up with this recipe when I was out of flour one morning and the kids were insisting on pancakes. These are really heavy, hearty pancakes...so don't be expecting anything light and fluffly!

Preparation Steps:

Take oatmeal and whir it in your food processor or blender.

Level of Difficulty:

Easy

Time Needed:

a few minutes

Ingredients:

2 cups ground oatmeal
1 TBS sugar
2 tsp baking powder
1 egg
1 cup milk
1 TBS oil
nutmeg & cinnamon to taste (we like lots)

Serves:Directions:

Mix all ingredients well. Drop 1/4 cup of mix onto hot griddle or skillet. Cook until the edges start to firm, then flip. Serve warm.

The ingredients for the recipes were lost in the most recent move. They are working on it still.

Thanks for the info! I hadn't noticed the original post was from 2008, but still wouldn't have know the ingredients were lost. Hope laramcgill comes back to see this.
