5 minute Chocolate Mug Cake
Mix right in the Coffee mug
4 tablespoons flour (that's plain flour, not self-raising)
4 tablespoons sugar
2 tablespoons baking cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
a splash vanilla
Put dry ingredients in mug, and mix well
Add the egg and mix thoroughly.
Pour in the milk and oil and mix well.
Add the chocolate chips (if using) and vanilla and mix again.
Microwave for 3 minutes (at 1000 watts.)
The cake will rise over the top of the mug, but don't be alarmed!
Allow to cool a little, and tip out onto a plate if desired, or eat right from the cup! Enjoy!

I am going to try this later with the kids when they get home from school. Sounds good. I think Sara posted this too, or something similar. I'll have to ask her what she thought of it if she tried it.

It's actually pretty good, and a good way to make some cake and not having the entire thing sitting there mocking your efforts to eat better, should you be attempting to eat better.
Be sure to use at least a 12 oz. mug. The cake will rise over the top fo the mug but won't run over.~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
