We have a travel trailer with all the luxuries at home. I hardly ever use me stove. It is smaller then the one at home. It heats up the camper. I do have a stove that hooks up to the outside. I use that alot. I take my crockpot and electric griddle with me. I put something in the crockpot the day we are leaving for camping. I set it up a home unplug it put it in box and put it in the back of truck and when we get to the campgrounds I plug it back in. I make chili or barbecue usually. This way when we are all done setting up I don't have to cook it is already done.

Meals we make spaghetti, stew. I make a chicken meal over the fire with tin foil. I also use my dutch oven on the fire. I use my electric griddle for pancakes, french toast, bacon, etc.

I cooked and eat pretty much the same as we did at home but then we lived in ours from March 16 to Dec. 1...I used electric skillett, crock pot, and an electric oven..I did most of my cooking out side as not to heat up the camper..

We never eat bacon @ home, but when camping, just tastes sooo good! I use Rachael Ray method of fixing bacon-bake in oven, cool & put in Tupperware. Heat up in micro.
bkfst--bacon, Jiffy mix muffins, toast, just add h2o pancakes, (many x's made ahead & frozen) cocoa/or ju/coffee
lunch--just a sandwich with fixins, I always fix a cheeseball, I get that out, fruit, carrots, & I buy family size teabags "cold"-1 bag per 2qt pitcher for drinks & always have pb& j handy.
supper-- I cook & freeze & put it in camper freezer. Use freezer bags, takes up less space. Freeze taco meat, cooked noodles drizzled with olive oil for alfredo & spag, sloppy joes, chili, beef/pork chunks for kabobs, anything you can think of. Just remember to freeze it solid BEFORE putting it camper freezer..will help with keeping other freezer stuff frozen. Those little freezers have to work hard in hot weather. I boil new red potatoes, season & oil them, put in ziploc-ready for grill. (do up several for several meals) I normally don't buy ready bag lettuce, but for camping-yes. I chop an onion & have it ready.
BEST thing I bought for our camper-a toaster oven. 30$/Walmart. A 8x8, 9x9, & 6 muffin pan fits. I use my camper oven for storage.
Just think convenience & easy. And NOW you have a freezer-DON'T FORGET THE ICE CREAM!! (how cool is that?)

Another thought is to use an ice chest to store the frozen meals that you have pre-frozen flat in zip-loc bags. This will not take up your camper's freezer space and use them as they thaw, usually what's on top thaws first. We did this for my sister when her son had a stroke (at age 14) & had to be in a rehabilition facility for several months. We would take her a cooler once a week. Spaghetti, soup, stew, gumbo, roast beef w/rice & gravy, stewed potatoes, chili, etc. Whatever we were cooking, we made extra & froze it flat in zip-loc bags; she had access to a microwave, so no dishes for her to wash & send home; she just kept a couple of bowls, plates & silverware for her & her dh to use. But the ice chest worked great for this; we would try to arrange the contents in an assorted manner so that whatever was on top would thaw and they would have a variety; with sandwich meat frozen at the bottom frozen into small amounts. Each bag being frozen beforehand creates your own ice packs so no ice needed or taking up space.

IDK, whenever we went camping as a child...we always cooked over the fire even if we had a stove. That's just what camping is all about! We would have bacon and eggs for breakfast or cereal something not overly time consuming. We would camp right on the lake, so we would be fishing for alot of the day, and would cook up whatever we caught for lunch or dinner...fresh from the lake fish with some camp potatoes cooked in beer, butter and with some onions...yummy! We also would forage around in the woods and would pick fresh blueberries, raspberries, mint..and either eat it straight or put the berries in our cereal in the morning. Of course Hot dogs, hamburgers and bbq chicken were a must as well!

I bought this at a park gift shop last summer. It's pretty neat.

I had a full size RV that we used to take camping and really enjoyed it.

    Some of my standards were:

    Breakfast:
Biscuits in a dutch oven over coals
    Eggs
    Gravy
    Sausage
    Bacon
    pancakes

    Lunch:
Biscuits with tomato or butter and jelly
    sandwiches
    snacks

    Dinner:
    Pasta with sauce
    hamburgers
    hot dogs
    chips
    smores

I tried to have something that involved everyone with every meal. Although I always got up and started the fire, someone would tend it while I started mixing the biscuits. While someone was watching and tending the biscuits, I would start the balance on the camp stoves.

We would always do a lite lunch as everyone would be doing things, hiking, fishing, napping etc... One of our fav's was always fresh biscuits with fresh tomatoes.

I so want to go camping!

Just got back from our last camping trip of the year, 2011. I have found I like the crockpot liners! I've used them the past 2 trips. I buy them @ WalMart for 4/1.87, in the sandwich bag section. You form one to your crockpot, add your food, cook, serve from the pot, when cooled, pull your liner out. Then-throw away the liner & the crockpot is clean!! Great for camping!
