    Default Bailey's Irish Cream Marshmallows

    Bailey's Irish Cream Marshmallows


    Recipe Description
    Great in hot cocoa. Or you can make 'adult' smores out of them!
    Preparation Steps:
    Have a greased and then powdered sugar dusted, 8 X 8 pan ready.

    1. Place Bailey's in the bowl of a stand mixer fitted with the whisk attachment and sprinkle gelatin over the top. Mix lightly with fork---don't try to mix it well yet.

    2. In a medium sauce pan, heat sugar, corn syrup, salt and water over medium heat, and stir constantly till temperature reaches soft ball stage (240F)

    3. Add the heated sugar mixture in a slow, thin stream to the stand (Bailey's) mixture while it's on LOW. Be *careful* here, you're working with HOT stuff. Gradually increase speed to high, and whip for 15 minutes (yeah, 15), until thickened and mostly cooled. Add vanilla, and whip a moment more.

    4. Pour marshmallow into prepared pan, and let sit overnight on counter. Cover loosely with wax paper if you want to.... NOT touching marshmallow.

    5. Dust work surface with lots of powdered sugar and turn marshmallow out of pan (pull up one of the corners of the marshmallow, flip, and let gravity do the rest), onto the powdered sugar.

    6. Use a greased pizza cutter or large flat edge knife, to cut the marshmallow into 1" size squares, dusting the edges as you go in the powdered sugar to prevent sticking.

    7. Store the marshmallows in a gallon zip-top bag with a few additional spoonfuls of powdered sugar in it. (shake the closed bag to evenly distribute the sugar).
    Level of Difficulty:
    Hard
    Time Needed:
    2-3 hours over 2 days (sets up overnight)
    Ingredients:
    3 envelopes of unflavored gelatin (like Knox)
    1/2 c. Bailey's Irish Cream liqueur
    1-1/2 c. sugar
    1 c. light corn syrup
    1/8 tsp salt
    1 1/2 cup water
    1 tsp. vanilla
    powdered sugar for dusting and coating
    baking spray (Pam type)

    You'll need a candy thermometer.
    Serves:
    about 60 marshmallows
    Directions:
    Enjoy in hot cocoa, or make grown up smores! Or just eat 'em!

    If you can find it, Carolans is very similar to Baileys but about $4-5 a bottle cheaper.

    difference.

    I make my own homemade Bailey's. Comes out at about $8 a pitcher (in your blender). It's awesome. My DH got the recipe from a barmaid. We don't know how, we don't WANNA know how......
