I'm going to the store tomorrow and picking up a couple of watermelons. I put up some plum, peach, and strawberry. I love anything watermelon. This is definitely going to be my next project.

Okay - in bits and pieces I have gathered all the ingredients (all you say - there are but a few ) - true, but remember that I live on a tiny island!!!
So I am ready to make watermelon jelly tomorrow!! Cannot wait!!

Mauimagic, are you using the same recipe for your mango jelly from the watermelon jelly recipe, please let me know how it turns out, I have some peaches and plums that I froze and need to make more jelly and really need an easy recipe. Thanks in advance.

I am sitting here with my water, relaxing before hitting my cleaning the LR project - just listening to the metallic ping of the tops of my watermelon jelly jars - music to my ears!! Lovely light taste!! Cannot wait to share them with my summer coworkers on Monday!! DH came home from the soccer training just as I was starting (and being a true local man) was not convinced when I told him what I was doing - give him guava jam any day!! Wait til he tastes my WJ - he'll be a convert! Mahalo again Debbie!!

I finally made the watermelon jelly today! I doubled the recipe and got 7 half pints.

Went and got all the stuff to make the watermelon jelly, cut open the watermelon and it wasn't quite ripe. It tastes a little on the green side so I am going to try again next week when I get back from my vacation. My sister is at my mom's from Chicago So we are going to see them all.

I've got a whole family full of watermelon lovers on my hands - so I need to give this a shot! I'll try one batch with your recipie & a second with Splenda & no sugar pectin, because two of my watermelon lovers are diabetic. I'll let you know how it turns out.

I finally made some of this wonderful watermelon jelly this morning. I did two batches and I got three 12-oz. jars out of each batch. Getting ready to make some more here in a few minutes. Hubby tried the little bit that wouldn't fit in the jar and he called me at work later in the day to inform me that since he bought the jars I can't give any of it away....lol.....what he really means is he likes it so much he wants to keep it all for himself!!
