    I want to say thank you to debbie-cat for this recipe. I made some and I like it! I made 2 small ( 4oz) jars to give away. One went to my elderly next door neighbor, but I haven't heard back from him if he liked it or not, and the second went to a trainer at the gym I go to. I mentioned that made some and she said watermelon jelly?!! I love watermelon. LOL So I took her some this morning. I'll see how she likes it next week some time. They have different hours during the week there so I may not catch up with her till like tuesday or wednesday. I like it, thats for sure. lol can't wait to eat some when theres snow or ice on the ground. yummers!

    Never heard of Watermelon Jelly, but the wife better be fast, I eat one every two days. A 1/4 in the morning, same at night, and repeat the next day. Darn buy mine at the store this year, but will go back and raise some next year.

    "EPIPHANY" I throw away the melon with a lot of fruit still on it, since it's not as sweet the closer to the rind, but it might even make better jelly. Gonna try this, ok ok , hear the crowd going ewwwww

    Finally got around to making this stuff, this weekend!
    First, I didn't follow the recipie to the T...
    First batch I did a "sugar free" version for my favorite diabetics.
    Substituted 1 1/3c splenda for the sugar, and "no sugar" box of pectin, so no mixing sugar & sure-jell. But everything else was the same & it was YUMMY! Made 2 jars.

    Decided that it was SO yummy, I needed some for those of us who can have sugar, so I made a second, double batch. Doubled everything - and ran out of ready jars. Yikes! It made 8 1/2 when all was said & done, & that was after refridgerating the portion I didn't have jars for & reprocessing it the next day. I think, if I do a double batch again, I might knock the sugar down by a cup, just because I think I can get away with it & it'll still be good!

    I found some Ball freezer jam pectin at the store. It's cheaper and alot easier ad quicker than Sure Jel. No cooking is involved either. Wonder if I can make watermelon jelly out of it? It says you can use your favorite fruit frozen or fresh. It also had directions for splenda on it too instead of having to buy a special low sugar box of Sure Jel and you only use 1 1/2 cups of sugar/lsplenda for any fruit. I made 24 containers of strawberry and blueberry and it took a little under 1 1/2 hours including finding everything. You only let it set 30 minutes instead of 24 hour to thicken. I might have to try it and see what I get. It makes 5 -8 ounce containers.

    I have a watermelon on my counter and I heard a rumor Christmas has been scheduled. If it turns out well..... folks will be getting a taste of summer in the middle of winter!

    I want to try this but for unknown reason...am afraid of 'canning' anything. Maybe b/c I haven't done it or seen it done in person? I may step up later on this year or into the next. I need all the supplies - jars, lids, tongs etc.
