Hello, I am a new owner of a brand spanking new cast iron skillet. I want to begin seasoning it. My question is, does it need to be seasoned with the same type of fatty oil every time? If I start of with coconut oil, and next time around use lard, will that mess something up?
You can use different types of fats. That will happen naturally as you cook with different fats and oils.
If your new pan is a Lodge or a Camp Chef, it's already got a coat of seasoning on it from the factory, so you can just start cooking with it right away. It never hurts to add seasoning, but it's ready to cook anyway.
Seasoning cast iron is a smoky business, so if you don't want your house smoked up you can use a gas grill outside.
You can use multiple types of oils/fats. I recently restored two cast iron skillets. Their first couple of seasonings were olive oil, then one or two sessions with vegetable oil, then one with bacon fat, and finally one with crisco. They've turned out pretty good, and they both passed the egg test, so no issues there.
