Okay. Well, I'm still betting you can use something you already have, even if it's a roaster or a dome made of foil or whatever. More than one way to skin a cat, after all. Although I sure hope you're not interested in skinning cats.

I wonder how it would work to use the pan under the bread and then place a roaster over the bread, above the steam pan. That would trap the steam somewhat but still allow a bit of air circulation.
