Here a few, OK, a lot of recipes that I have came across. I hope it is OK to post them here. If not, please let me know!
CHICKEN RECIPES
DOOR SLAMMER CHICKEN Serves 8 (D.O.)
8 - Chicken breasts – skinned
2 – 8 oz. Bottles Russian salad dressing
1 – 12 oz. Pineapple-Apricot jam
1 – pkg. Onion soup mix
Brown chicken in Dutch oven. Mix all ingredients in bowl, stir. Pour over chicken Cover and bake for 90 minutes. CHARCOAL HINTS: Low heat is best – let simmer for the 90 minutes. You will need to get some briquettes going at the 45 minutes make to have enough to finish cooking. SERVING HINTS: Serve over hot rice.
HOT CHICKEN DELUXE (D.O.)
2 c Cooked Chicken (diced or shreaded - white meat works best)
1 tbsp Onion (finely chopped or grated)
2 c Celery (diced)
2 tbsp Lemon Juice
1/2 c Almonds (sliced or chopped)
1/2 c Cheddar Cheese (grated)
1/2 c Croutons (plain or seasoned - your choice)
1 c Mayonaise (salad dressing may be substituted)
1/2 tsp Salt
1/8 tsp Black Pepper
Olive Oil
Place heavy saucepan on hot coals. Coat onion, celery, and almonds with olive oil and saute’ (cook until tender). Drain off excess olive oil. Add the chicken, lemon juice, mayo, salt, and black pepper to the saucepan. Raise the saucepan just above the coals using 2 sticks of similar size. Cook until until hot (approx. 10 mins.). Place the croutons on top of the mixture. Place the cheddar cheese on top of the croutons allowing the cheese to melt before removing from the coals (approx 5 mins.).
EASY CHICKEN ENCHILADA CASSEROLE (D.O.) Serves 4 to 6.
3 large cans chicken chunks
1 (8 ounce) bag grated Cheddar cheese
Medium or large bag tortilla chips
1 can cream of chicken soup
1 can enchilada sauce (same size as soup)
Large can refried beans
Small onion Heat Dutch oven and lid over fire. Line bottom and sides of Dutch oven with foil to minimize clean up. Cover bottom of foil-lined Dutch oven with tortilla chips, standing some up on sides. Save some for top and for eating later. Gently heat refried beans in small pan, adding a little water to thin a bit, stirring constantly to avoid burning. Spread spoonfuls of refried beans over the chips as evenly as possible. Crumble chicken into smaller chucks and spread evenly over the chips and beans. Chop half a small onion, more or less, into small pieces and sprinkle over other ingredients Mix together enchilada sauce and soup (use same pan as beans to save cleanup). Heat and stir until smooth. Pour sauce mix over chips, beans and chicken. Top with even layer of grated cheese. Bake in Dutch oven with medium heat, coals top and bottom, for about 30 minutes until hot through and cheese has melted. NOTE: If desired, add chopped tomatoes before cheese layer. Serve with extra chips.
CLAUDIA’S CHICKEN DISH (D.O.)

1 can Cream of Chicken soup
1 can chicken (approx. 10 oz.)
1/2 pt. sour cream
1 can chopped Ortega chilies, with juice
1 sm. can sliced black olives, drained
3 cups grated cheddar and jack cheese
Mix soup, chicken, sour cream, chilies, olives and 1 cup of the cheese mixture in a bowl or large ziplock-baggie. Cover the bottom of an 8x10 casserole dish or 14" Dutch oven with a small amount of the mixture. Cover with a layer of tortillas. Spread 1/3 of the remaining soup mixture and 1/3 of the remaining cheese mixture over the tortillas. Cover with another layer of tortillas. Add another layer of the soup and cheese mixtures using half of each. Add a final layer of tortillas and the remaining soup mixture. Top with the remaining cheese. Bake at 350 degrees for 35 to 45 minutes. For dutch oven obviously time will vary with heat/temp. Judge by the melted cheese on the top layer.
DUTCH OVEN CHICKEN (D.O.)

1 whole chicken cut up
4 potatos cubed
2-3 carrots cut up
1 mdeium onion quartered
2 cloves garlic minced
1 can cream of mushroom soup
1/4 cup oil
1 can beer salt & pepper to taste
brown chicken in hot oil, add veggies, garlic ,and salt and pepper, and half the beer. cover and cook for about 45 minutes. add soup and rest of the beer and cook for about 15 more minutes. I use about 8 to 10 coal top and bottom
BETTER THAN BBQ CHICKEN (D.O.)
Effort: easy Serves: 3-4 Prep time: 1-30m
1 family-sized pack of fresh chicken drumsticks
1 bottle Catalina salad dressing
1 jar apricot jam
1/2 c. brown sugar
1/2 c. bbq sauce (your favorite kind)
Mix everything but the chicken together in a frying pan. Add the chicken, turning to coat. Cook until done, turning occasionally. Takes about 40 minutes and the chicken will start falling apart. Yummy!

CHICKEN IN A BAG (FOIL PACK) Chicken Parts
1 Bottle Italian Salad Dressing
1 Tsp. Pepper
Throw everything in the bag and put on outdoor grill for 35 min. I usually marinate first in plastic bag. To go with the dish, I use a separate foil bag or heavy duty foil to form bag for the veggies. No clean up and very easy while camping.
CHICKEN SUPRISE (FOIL PACK) 4-6 Chicken Breast
1 Can Cream Chicken Soup
1 Can Cheddar Cheese Soup
1 Lg. or 2 Small Cans of Mixed Vegetables
In a foil pan, combine both soups (condensed) and vegetables. Stir together. Add chicken and coat with mixture. Cover foil and cook on nice, hot coals for about 20-25 min. or until chicken is cooked well.

HOBO POT PIE (FOIL PACK)
1 pkg Deli Style Chicken Or Turkey
1 can Mixed Vegetables (drained)
1 can Gravy (should match meat type)
Butter
Bread
Foil or Pie Iron
Butter one side of 1 slice of bread butter side down on a foil square or pie iron. Place 1 tsp of mixed vegetables on bread. Put the desired amount of meat on bread. Spoon some gravy over the meat. Butter one side of another slice of bread and place it butter side up. Seal up the foil or close the pie iron and place on hot coals. Cook for approx. 3 mins. per side depending on how hot the coals are.
