    PARTY POTATO CASSEROLE

1 lg. pkg. hash brown potatoes
    1 pt. sour cream
    1/2 stick melted butter
2 cans cream of chicken soup
2 tbsp. grated onion (or to taste)
    1 tsp. salt
    Pepper, to taste

Mix all ingredients and bake at 350 degrees in 13 x 9 inch pan until bubbly through - approximately 30-40 minutes. Also easily done in crock-pot - high for 30 minutes, then low for 2-3 hours. Use 3/4 stick butter for crock-pot.

I was thinking of making some make ahead mashed potatoes (with sour cream and cream cheese) but maybe I'll make that hashbrown casserole....hmmm. Also going to have corn, green bean casserole, homemade cranberries, lemon jello with pineapple and cool whip, lefsa, apple pie and christmas cookies.

tbs727--would you share your apple custard recipe? Sounds good--almost comfort food on a cold snowy now rainy windy day.

Ham, mashed potatoes (shh...with cream cheese, sour cream...), scalloped carrots (cheesy heaven), green beans or asparagus.
    Not sure what's for dessert.

at my grandmother's gathering we'll be having hot potato salad (basically mashed potatoes with olives, dill pickles, celery, onions, and hard boiled eggs - a twisted version of german potato salad), squash casserole, creamed spinach, veggie tray with dip, and a shrimp ring with cocktail sauce with the ham. There will probably be a few other dishes, plus desserts, but those are the dishes we have every year with ours.

I'm probably not cooking one for Christmas dinner, but will probably do one early in the week. My favorite with it is baked potatoes and green beans. Plain, but good.

Darlene, would you mind sharing your scalloped carrot recipe? I've never tried those. Now that I've found lactose free cheese, I'm in cheese heaven

Oh man, so happy you found your cheese fix, I couldn't imagine life without cheese.
So glad I found this recipe online,(saves me alot of typing) the original came from an older Good Houskeeping Cookbook. http://www.bigoven.com/57193-Cheese-...ts-recipe.html
We make it using 2lbs of carrots, shredded cheese, in a 2.5qt. casserole(I like it in an oblong pan so more surface area = crispy cheese goodness) and instead of the cornflake crumbs we use 1/8c buttered bread crumbs. Sooooooooo good.
