    Default cookie dough question

has anyone ever premade their cookie dough and either froze or refrigerated it until they wanted to bake it (like the pillsbury rolls, etc.)? do you thaw it for any specific time before baking it or bake directly from fridge or freezer? was thinking of doing that, making the cookie dough one day then baking the 23rd & 24th....any advice would be appreciated...thanks all

Yes I did make it ahead of time and freeze; (an idea from a VERY ORGANIZED PERSON) and it worked beautifully. I think I thawed it in the refrigerator. As a matter of fact I'm planning on doing it now also. The good part of this too is you can get soo much more baked when the recipes are all ready to go.

We do that quite often. Most of the basic cookie recipes freeze well. We just freeze the dough in logs wrapped in plastic wrap, then slice and bake while frozen, or in the case of cookies with chunky stuff in like chocolate chips, slice about an inch thick and cut in half or in quarters, then bake. An ulu is the best tool we've found for slicing, but you can use other types of knives of course. The shape of our cookies isn't always the prettiest, but for 'everyday' cookies it doesn't matter to us and the convenience is worth the imperfect presentation. It all tastes the same anyway.

You could bake them and then freeze them, too. They'll keep nicely, especially this close to Christmas.
