Best Jam Thumbprint Cookie
3/4 pound (3 sticks) unsalted butter, at room temperature
1 cup sugar
1 teaspoon pure vanilla extract
3 1/2 cups all-purpose flour
1/4 teaspoon kosher salt
1 egg beaten with 1 tablespoon water, for egg wash
7 ounces sweetened flaked coconut
Raspberry and/or apricot jam
Preheat the oven to 350 degrees F.
In an electric mixer fitted with the paddle attachment, cream together the butter and sugar until they are just combined and then add the vanilla. Separately, sift together the flour and salt. With the mixer on low speed, add the flour mixture to the creamed butter and sugar. Mix until the dough starts to come together. Dump on a floured board and roll together into a flat disk. Wrap in plastic and chill for 30 minutes.
Roll the dough into 1 1/4-inch balls. (If you have a scale they should each weigh 1 ounce.) Dip each ball into the egg wash and then roll it in coconut. Place the balls on an ungreased cookie sheet and press a light indentation into the top of each with your finger. Drop 1/4 teaspoon of jam into each indentation. Bake for 20 to 25 minutes, until the coconut is a golden brown. Cool and serve.

I've posted this on here before, but it's a huge favorite around my house.
SOFT GINGER COOKIES
This recipe is from Better Homes and Gardens Christmas Comfort & Joy
2 1/4 cups all-purpose flour (I use whole wheat pastry flour)
2 tsp. ground ginger
1 tsp. baking soda
3/4 tsp. ground cinnamon
1/2 tsp. ground cloves
1/4 tsp. salt
3/4 cup butter, softened
1 cup sugar (I use evaporated cane juice crystals)
1 egg (I used 1 T. soy flour + 1 T. water)
1/4 cup molasses
2 T. sugar (I use evaporated cane juice crystals)
Preheat the oven to 350*.
Combine the first 6 ingredients and set aside.
In a large mixing bowl with an electric mixer, beat butter for 30 seconds. Add 1 cup sugar; beat until fluffy. Add egg and molasses; beat well. Add half the flour mixture; beat until combined. Stir in the remaining flour with a wooden spoon (I use the mixer and they turn out fine).
Shape into 1-inch balls. Roll in 2 T. sugar; place on ungreased cookie sheets 2-inches apart. Bake in preheated oven 10 minutes or until light brown and puffed. Let cool on cookie sheets for 2 minutes then transfer to wire racks to cool. Makes about 36 cookies.

here's mine
Coconut cookies
1 cup real butter
1 cup shortning
21/2 cups sugar
1 cup coconut
3 cups flour
1 tsp Ammonium carbonate ( do not eat raw dough(
cream butter and shortning add sugar and cream well add coconut.flour and amonium to mixture
roll into small balls and bake in slow oven until light brown
325 degrees
This is a recipe I got from my MIL.
FernYes I'm out of my mind. It's a dark and scary place in there.

What fun! But I'm not a member of the Baking Club. I've seen references to the club but cannot find where to "join". Can ya help me??

I always bought Pfefferneusse cookies at Christmas time. I have a recipe that turned out pretty nicely:
1/2 c butter
3/4 c packed brown sugar
1/2 c molasses
3 drops anise oil (I omitted this)
1 egg
1/2 tsp baking soda + 1 Tbsp hot water
3 1/2 c flour
1/4 tsp salt
1/2 tsp ea cinnamon and ginger
1/8 tsp white pepper (I used fresh ground black)
icing sugar
Cream together butter and sugar.
Add molasses, anise oil, egg, baking soda and water.
Combine dry ingredients, then blend into butter mixture.
Knead 1 min or until workable.
Shape dough into 1" balls
Place 1 " apart on ungreased baking sheets, bake 10-12 min @ 350
Do not overbake. When cool enough to handle, roll in icing sugar. Store at room temperature.
