With so many holidays at one time it seems only right to say happy holidays.
Life may not be the party we hoped for, but while we are here we might as well dance.

During the holiday season, I always say Happy Holidays, because I never want to assume that everyone I meet is Christian. So, if I'm at church, I will obviously say "Merry Christmas" since it's a pretty sure bet that everyone there is celebrating Christmas. However, to strangers or at school, I say "Happy Holidays" because I don't know what people are celebrating.

If I know they celebrate Christmas, I say Merry Christmas, but if they are a stranger to me I avoid it.
