    Default Need help gals, I lost a recipe.....

    I lost my grandma's recipe for butter cookies, this is an absolute MUST for Christmas! Mom is gonna kill me!

    Anyway I know part of it:

    1 pound butter (softened)
    4 cups all purpose flour
    ???? light brown sugar

    That's it, 3 ingredients and I can't for the life of me remember how much light brown sugar to use. Anyone have this same recipe?

    Do you mean that there are only those 3 ingredients in the recipe?

    I'll keep looking...I did a search on your name + butter, and I read every thread that came up with no luck. I also checked the cookbook in case you posted it there. I'll consider it a personal challenge PLMK if you find it, though, so I'll know to stop looking.

    Oh, I'd leave out the extract and use 1c brown sugar firmly packed to replace the reg sugar. All brown sugar is, is a mix of molassas & sugar so the molassas flavoring of the brown sugar can "sorta" replace the flavoring of the almond extract. make sense? lol

    ROFL I checked the same places yesterday!

    Still haven't found it, but I think it is either 1 cup or 1 - 1/4 cups of brown sugar. LOL I'll just start with a cup and see how it looks, I'll know if I got it right. You may stop looking now Chelle.

    I think I found the recipe you were looking for in an old Betty Crocker book. It calls for

    1 cup butter
    2 cups flour
    1/2 cup sugar (guess you could sub. light brown sugar)

    and makes 8 dozen. Sounds good, I might try these!

    Here you go:

    Butter Cookies

    1 cup butter,softened
    2 cups flour
    1/2 cup sugar
    1 cup finely chopped walnuts (optional)

    Heat oven to 350*. Mix thoroughly all ingredients. Roll dough 1/4 in thick on lightly floured cloth-covered board. Cut into 1 1/2 inch circles. Place on ungreased baking sheet.
    Bake 10 to 12 minutes. If desired, sprinkle with confectioners sugar or put together in pairs with raspberry jam.
    Makes 8 dozen small cookies
