Carrot cookies
In medium-sized bowl, sift together flour, salt, and baking powder.
In large bowl, cream together sugar and shortening. Beat in eggs and lemon extract. Stir in grated carrot.
Add dry ingredients to large bowl and mix well.
Drop by spoonfuls onto a greased cookie sheet. Bake 10-12 minutes.DH aka Mad Hen

Okay, now all the places I messed up or changed the recipe.

- Didn't have enough shortening, so I did about 2/3 shortening and 1/3 unsalted butter;
- Used the pulp left over from juicing my carrot juice this morning;
- Rolled the cookies rather than dropped from spoon;
- Used parchment paper instead of greasing the sheet.
That said, I think I got a denser cookie than the recipe intends, and that the actual cookie (as per recipe) would have a more cake-like consistency.
It might also be good dipped in granulated sugar before baking, or with a white decorator frosting garnish.DH aka Mad Hen

Thanks for the recipe, Madhen. I'm not a big fan of carrots, but I might be tempted into trying these....oh, and I *~LOVE~* that idea about cream cheese frosting!! Yummy.

Cream cheese icing on these are really good. Ahh......... who am I kidding, put cream cheese icing on a rock and I'll eat it lol.
