Pumpkin Pie Cookies
Pumpkin Pie Cookies
Recipe DescriptionPumpkin Cookies with a melted Butter FrostingPreparation Steps:Preheat oven to 350 degrees FLevel of Difficulty:MediumTime Needed:Ingredients:3 cups all-purpose flourServes:Directions:
1 teaspoon baking powder
1 teaspoon baking soda
3 teaspoons pumpkin pie spice
1/2 teaspoon salt
1/2 cup butter, softened
1 1/2 cups white sugar
1 cup fresh or canned pumpkin puree
1 egg
2 teaspoon vanilla extract
Frosting:
2 cups powdered sugar
3 tablespoons milk
2 tablespoons melted butter
1 teaspoon vanilla extract1. Combine flour, baking powder, baking soda, pie spice and salt.
2. In a large bowl, cream together the 1/2 cup of butter and white sugar. Add pumpkin puree, egg and vanilla and beat until creamy. Mix in dry ingredients. Drop on cookie sheet by tablespoonfuls.
3. Bake for 12-15 minutes in the preheated oven. Let cool.
Frosting:
Combine confectioners' sugar, milk, 2 tablespoons melted butter and 1 teaspoon vanilla. Add sugar or milk as needed to achieve desired consistency.
Some like to drizzle the cookies, I prefer a frosting consistency.
