    Smile Crockpot Jambalaya

I place everything (except the rice, shrimp, and cornstarch mixture) in the crockpot. Yes, chicken is raw, and sausage not browned. I let her rip on low for 8-12 hours or on high 4-6. Just prior to serving I add thickener and let it cook about 5 minutes more. If you wanted, the shrimp could be stirred in at the same time as the thickener.
This is an easy version of Rachel Ray’s Jambalika, brought about by my lack of ambition at 7pm or later, when I’m starved.
You could make this in about 45 minutes on the stovetop- cook celery, pepper, and onion with oil, add chicken and sausage, garlic, spices, then stock and tomatoes, adding shrimp and cornstarch mixture at the very end. Serve with rice.
    Enjoy!
