    Default Healthy sweet potato chips

    Healthy sweet potato chips


    Recipe Description
    All the salty goodness of a potato chip without the grease and fat! (This recipe can also be made with regular potatoes, but you'd want to rinse them after blanching.)
    Preparation Steps:
    Spray dehydrator tray with non-stick spray.
    Peel potatoes.
    Slice thinly (I used a vegetable parer.)
    Steam-blanch for 5 minutes.
    Level of Difficulty:
    Easy
    Time Needed:
    15 min + drying time
    Ingredients:
    Sweet potatoes
    Olive oil non-stick cooking spray
    Sea salt (fine)
    Serves:
    Depends on qty and size of potatoes used
    Directions:
    Place potato slices on prepared tray.
    Spray slices lightly with olive oil non-stick cooking spray.
    Sprinkle salt to taste over slices.
    Dehydrate at 135F for approx 1 hour or until desired crispness. Slices will crisp a bit more after cooling.

    I'll have to try these. I love baking sweet potato chips in my oven, but they don't last.

    oh thanks ! I was taking inventory of my fridge and trying to figure out what snacks I could make for the kids this week. I have .25 in my wallet and 5 days tell payday. The only thing I have plenty of is potatoes. I will get started on this right NOW!

    Hmm...I wonder how baking these would fare if you didn't have a dehydrator? Was funny, I was sitting here reading and wondering if you were eating raw but dehydrated potatoes til I re-read it and saw that it said 'steam blanch'

    This sounds like a wonderful alternative Thanks for sharing!!
