We don't have a traditional Easter dinner, but I am always happy to find a sale on whole hams, and around Easter is a good time for that. If I can find the whole, bone-in hams for less than $1.00 a pound, I will be cooking one of those. I freeze the extra meat in one pound portions in Ziploc freezer bags.

We usually have ham with pineapple sauce, scalloped potatoes, corn pudding, asparagus, rolls, deviled eggs (of course!), and chocolate bunnies for dessert.

Honey-Baked Ham, potato salad, devilled eggs, green beans, sweet potatoes, rolls and I also make the easter basket cupcakes with the green coconut, jelly beans and pipe cleaners (new) for the handles.

jello salad of some kind
green bean casserole
sweet potato casserole
broccoli salad
home made Easter eggs(Choc.)
rolls and cheesecake & carrot cake

I'm getting hungry! We usually have
**Leg of lamb with mint-apple jelly
(sometimes we have a honey-baked ham, but my brother and his family do not eat pork)
**Asparagus with mustard sauce (good on honey-baked ham!)
**A big green salad with Mom's home-made dressing
**Home-made rolls or bread
**Home-made lemon meringue pie (Mom's ds in Sacramento, California has a lemon tree in her back yard and we get really good lemons not only for the lemon pie, but for a base in part of Mom's salad dressing!)
I really love the holidays and the traditional menus we have.

We have a large brunch with home baked easter breads and a fritatta consisting of hard italian sausage both hot and mild eggs and ricotta cheese absolutely delicious and of course pastries

We have ham, sweet potatoes, mashed potatoes, greenbeans, cranberry sauce and fresh rolls. I make usually a pie or cake for dessert.

Ham, scalloped potatoes, sweet potatoes, butternut squash, rolls, broccoli, asparagus, stuffing, fruit salad and orange fluff, veggie tray and dip, cheese and crackers, deviled eggs. Cake for dessert. Lots of yummy leftovers for a couple of days.
My kids love orange fluff.
Creamsicle Fluff
1 small box orange gelatin
1 cup boiling water
1 small box instant vanilla pudding
1 (8-ounce) container whipped topping
1 can mandarin oranges, drained well
Dissolve gelatin in 1 cup boiling water. Add 3 ice cubes to a measuring cup and fill with cold water to make 1 cup. Add to gelatin and hot water. Stir well until dissolved. Let set for 5 minutes to cool. With electric mixer, stir the dry instant pudding into gelatin. Mix well. Let stand for 15 minutes. Fold in thawed whipped topping and then the oranges. We do a morning brunch now instead of dinner. SIL makes a to-die-for breakfast strata and a to-die-for cream cheese strata sometimes. My mom always wants the same food every time and SIL and I want variety. Mom makes mini muffins, three different types (but the same types every time) and this year I am rebelling against making ham rolls because I just made them for Christmas. For crying out loud why does she want the same food EVERY holiday?? Ok sorry this is a rant now. hahahaaa. I just don't understand bringing the same food to every gathering.
So I am bringing two small fruit trays and one large veggie tray. Mom will probably be upset I didn't bring ham rolls. I don't care. Maybe I wont make them for Thanksgiving or Christmas either. Maybe I'll never make the stupid things ever again. Hi, I'm two years old again throwing a tantrum over ham rolls.

I've never hosted Easter dinner because I'm not really into it. Between my parents and my MIL it's usually something like fried chicken or ham, macaroni salad, potato salad, baked beans, tossed salad and rolls.
Going to MIL tomorrow so we will see.
She does make some yummy scalloped potatoes.

We're not doing anything special this year. I'm hugely pregnant and don't feel like cooking a big meal and am not allowed to be on my feet more than 30 minutes at a time. DH gets off of work in time to go to church, sleep and then got back to work.
So we're doing Hebrew National hotdogs, baked beans, corn on the cob and maybe some boxed mac and cheese
