Oven Roasted Vegetables

Ingredients:

1 teaspoon salt
1/2 teaspoon Black Pepper
1/2 teaspoon Nutmeg, Ground
1 lb. brussels sprouts
1 small butternut squash, peeled and cut into chunks
1 large red onion, peeled and cut into chunks
3 tablespoons olive oil

Directions:

Preheat oven to 450°F. Mix seasoned salt, pepper, and nutmeg in small bowl. Toss vegetables with oil in large bowl. Sprinkle seasoning mixture over vegetables; toss to coat well.

Spread vegetables in single layer on foil-lined 15x10x1-inch baking pan.

Bake 30 to 35 minutes or until vegetables are tender and golden brown.

Even easier: roast the veggies in the toaster oven. An 8 inch square pan fits perfectly. It takes 30 minutes for brussels sprouts, 25 for cauliflower and 20 for broccoli. Just toss with olive oil, season with sea salt and fresh ground pepper.
