Baked Mahi, or any white fish

Recipe Description
Very simple recipe for Mahi that will leave it moist and flaky with lots of flavor
Preparation Steps:
Place fish in a shallow pan and add a small amount of milk. Let the fish soak for about 15 minutes turning once. Remove fish from milk and pat dry. Spread about one tablespoon of mayonaise over each fillet of fish and immediately coat in mixture of 1/2 Panko and 1/2 crushed Ritz crackers.

Place the fish in a single layer on a pan sprayed with cooking spray. Bake in 350 degree oven for about 20 minutes, or until fish is flaky when checked with a fork.
