    love soup! split pea is easy and yummy. beef veg is another fav! i make minnestrone, lentil and pasta, pasta fagioli is another easy and favorite here!

    I'm in. I have a ton of cauliflower left over from the veggie tray at the wedding reception. I'll make some cream of cauliflower soup and I make a mean hm veggie soup too. I'll have to think of a new one to try also.

    I was in the mood today so I made my first one. I just used whatever I had in the pantry, so no money spent. Oh man, it was really good and even the family liked it! This is my recipe...

    1 TBS of Olive Oil
    1 TBS garlic
    1 TBS minced onion
    1 can black beans, rinsed and drained
    1 cup of corn
    1 jar of my canned tomatoes that I canned the other day
    1 can veggie broth (wanted some more liquid)
    1/2 TBS of chili powder
    1 TBS of cilantro (and I through some more in at the end)
    S&P

    Sautee' minced onion and garlic on low heat so the garlic wouldn't burn in evoo. I just added the rest and I brought it up to a boil and then simmered it for about 20 minutes. There is not much left over to even freeze.



    I served it topped with cheddar cheese and cheese doritos which was really good crushed in it. The dh put pepper jack cheese in his and my daughter did mozzerrela. I bet sour cream would be good with it too.

    Sorry about the camera. But I barely looked at the pic, just at the list of ingredients. Never been a very "visual" person. I think the only thing I don't have is black beans, and I may just have to make a special grocery trip just to try this soup! I'm thinking I might try roasting the garlic first, just because I LOVE roasted garlic and use any excuse to eat it.

    Yum, roasted garlic. Do you have pinto or northen beans? I bet that would work too. (but I know bb works better). I think next time I will pump up the volume on the garlic, chili powder and cilantro. Or maybe a shot of hot sauce? I was trying to go easy for my family. lol. That's the fun part about making up recipes, you can always perfect them to your taste. My dh will eat vegetarian meals as long as I keep cooking them.

    My darn camera is only like 3 years old and it just stopped working over night.

    ETA, I only used minced onions because I had no onions on hand.

    I just posted a recipe in the FV cookbook for spicy veg chili. If you didn't see it, you might want to take a look. It is a crockpot recipe, so I posted it in there. It was REALLY good, and very spicy!

    I do have pinto beans, but I have to go grocery shopping anyway, so I don't mind picking up black beans. Were they canned or dry?

    And ditto on pumping up the garlic. I usually use about 2x what is called for in the recipe!!

    I will check it out. We need a "pump up the garlic" smilie. heh.

    They was the last of my canned beans on hand. Next time it's soaking and prepping power.

    It won't even power on and I have tried a million new batteries. We keep it in the same place so I have no idea why it just died on me.

    How do roast garlic? Soup does sound good. Mahalo for the recipe.

    We are having grilled pepper jack cheese sandwiches and split pea soup for dinner. Soup is from the freezer so doesn't count for this challenge, but definitely puts me in the mood to make more!!

    You put olive oil and garlic in the oven at like 375. You let it roast for like 40 minutes, put I guess it depends.

    My roasting skills vary. Sometimes it's higher heat and depends what other veggies you have mixed with it.

    You're dinner sounds good!
