    made this the other night. Did not add croutons and used dried basil. Pretty much just tomatoes and cheese. I didn't think there would be enough dressing but it was perfect, will make again!

    We had a mac n cheese cook off at work on Thursday. I made a Chipotle Mac n cheese. It was tasty, but had a nice kick to it!

    I made a new soup with leftovers (new to me at least) last night. One small bunch of broccoli, about one half of a butternut squash (roasted), 1 large carrot, 1/2 large onion, 1/2 can cream of mushroom soup, about 2 cups of water, a pinch of garam marsala, nutmeg, garlic and salt. Simmered until all the vegetables were soft, then blended it with an immersion blender so it was smooth. It was so so good!! The butternut squash is the predominant flavor.

    Made a carrot cake recipe from Peas & Thank You cookbook. These are really good. (I substituted raw, finely grated carrots for pureed carrots and used real cream cheese I had on hand, rather than Tofutti cream cheese in the icing.)

    I made a new recipe tonight, Vegetarian Pad Thai, from a cookbook from the library. The recipe was good, but not too different from another recipe that I make occasionally.
    But I found a way to make really good tofu, from an entirely different source. The tofu is drained and pressed to remove liquid as usual. But then it is sliced and cooked in a dry skillet very slowly pressing to get the liquid out, until nicely browned. THEN, it is marinated. Since the tofu is so dry before marinating, it really soaks up the marinade! Now I can say I really love tofu! Here's the method in case anyone is interested:
