FYI we tried this one tonight and it was FANTASTIC! The hamburger I had was in 1 lb. packs so I used the whole pound of meat, I used more onion than was called for just because I like onions, and we were out of celery seed so I skipped that, but I used the whole can of cream of celery soup so I figured that would compensate somewhat. Anyway, it's definitely a keeper -- hubby kept raving about how good it was!

I don't really cook much, but I do love to bake. I'd like to try at least a couple of new things each month. Yesterday, I made chocolate cookies that taste almost like brownies and are even better today than they were fresh-baked. Today, I made hamburger/sandwich buns for the very first time, and they are great, too. Dd was impressed by how much the inside texture looks like a real burger bun

I made up this recipe tonight after looking over several black bean soup recipes:
Rotisserie Chicken, Blackbean, and veggie soup
2 oz rotisserie chicken, diced
1/3 cup frozen corn
1/2 cup frozen seasonal blend
2 tble tomato sauce
2 tble Pace picante sauce
1 can black beans, drained and rinsed
1 can chicken broth
Paprica
Cumin
Garlic powder
Combine all but the chicken, cook over medium heat for 5 minutes or so. Mash bean mixture slightly. Add the chicken and cook for a couple min. more.
Makes 2~1 1/2 cup servings

I'm a little late in joining but would like to tackle this challenge as well. I'm aiming for one new recipe each week which means I should have 45-50 new recipes that are "keepers" out of 52 attempts (I'm realistic and know I probably won't get rave reviews on some things) by the end of the year!
So far I tried a homemade minestrone soup recipe and the family LOVED it! One down, 51 to go!May Goals:
Only $300 for groceries this month - $206/$300

10. Get our home organized: use a receipt book, keep my coupon organizer in check, have a touch-once policy for paper (touch once and then file or toss).
11. Achieve "give or get" goal of $1500 for the board I serve on by 9/30/12.
12. Taxes filed by March 17.

The Carrot Potato Boats (recipe above)came out well just needed a bit more salt for my taste. Hubby made them & I'm assuming he followed the recipe exactly. Keeper taste wise and looks so pretty too.

Ok for my dinner tonight I had said I would make sausage and rice. Well I took a box of spanish rice, cut up whole tomatoes and cut up and fried sausage and made a 1 skillet meal out of it tonight for dinner. It was fantastic.
