    Week 2 starts tomorrow. Time to assess what I have used in week one. I feel like I haven't done great. I have plans to go through more the upcomming week.

    finished off the bag of pizza rolls, finished off a bag of mini corn dogs, 1 frozen pizza, some lunchmeat from the fridge. All of this was stuff that was in my house when I started the challenge.

    I did a bunch of bulk cooking last weekend, so this weekend, I just brought up several containers to thaw in the fridge, so I can eat this week.

    I threw away the can of Tomato Basil Soup because it was past it's pull date. I need to not buy food that is just going to sit in my pantry for years!

    Question: can those crushed tomatoes I have in my freezer go into soup? Or is there something else they could be used for? They've been there over a year and I'd like them gone.

    I put frozen tomatoes into my soups some times. I usually used home canned tomatoes, but when I don't use the whole jar, I freeze the leftovers and use them in whatever, soup, sauce, chili, etc.

    For reasons beyond my understanding, I have several packages of dehydrated bean thread noodles in my cupboard. Today, I rehydrated one package, and mixed in some sauteed mushrooms and Bulldog Worcestershire sauce. Very tasty!! I may do a full-blown yakisoba, with carrots, onions, etc, to use up the rest of this package (and the other 2 or 3 still in the cupboard).
