    Default April baking challange

    Haven't seen a post of what everone is baking in April if one is already started please deleate this one.I plan on baking some cookies and muffins and maby some bread.What is everone else baking?

    I've never tried making biscotti.... So far in April, I've made no-bake cookies, bread, pumpkin cake, & tomorrow I will make more bread & baked oatmeal.

    Since my SO is in Dublin 4-5 days a week for 2 months I'd like to make something nice for him weekly to ease the pain of my absence, of course . So far I've made chocolate chip cookies this week, but I'm going to have to think of something nice to bring down to him this Friday!

    So far I'm thinking brownies, but maybe I can steal some of your ideas

    I HAVE to bake an apple pie........need to get rid of some apples.

    Have been craving the PB bread...........that I had made soooo often now. Posted on here..........

    Have a new lemon cake recipe to try....can't seem to get off that kick...........still searching for the perfect lemon recipe.

    Do NOT try the one on the back of the Krusteaz box....UGH!

    I dug out a TON of rhubarb recipes........but that will be in late May or early June........unless I am getting rid of some in the freezer.

    I have some bananas in the freezer I need to use up, so I foresee banana bread or muffins in the not too distant future.

    I made several batches of freezer cookie dough. My husband usually bakes those though so maybe it doesn't count. I did experiment and froze the dough for my mom's gingersnaps, my all-time favorite cookie. They're supposed to be rolled into balls and then rolled in sugar, but I decided rolling the dough into logs and then rolling the logs in raw sugar might work, and it did. Love that! Much less work and time vs. rolling into balls, too. Win-win!

    This morning I got reduced bananas for 29 cents a pound (banana bread soon ) and reduced Granny Smith apples for 49 cents a pound (apple pie soon).

    I'm going to try French bread next in the machine.

    What I made wasn't necessarily 'baked' LOL Rice chewy treats (used puffed rice vs rice krispies) I made two batches: one plain and one with pb and l/o b'na cheerios. They didn't last very long!

    Ha, Libby, I did the same thing. I made my (okay, Northern Ireland's) patented fifteens, but as they are a fridge biscuit I'm not sure I can call it baking haha.

    Next is a really basic custard tart recipe a friend passed on to me, since I know my SO loves them. I'll let you know how it goes once they're made.
