    Default December/Holidays 2011 Baking Challenge!

    I don't think there's another thread going on yet? I have a goal to bake 15 things during the month of December (most around the holidays).

    So far in December I've baked:

    1. Blueberry Cornmuffins
    2. White chocolate, Geranium, & Almond Muffins

    Anyone else want to join?

    I'm in, I am so far behind now on my cookies. I'm trying to get all my recipies together and will post later.

    Thanks for joining pinetree!!

    So I don't have a specific list of things I definitely want to bake, but I am trying to do muffins every week (a different kind every week, in addition to the two I posted up above, at the end of November I made cranberry streusel muffins) - they are a cheap breakfast solution that's fun and takes ZERO prep time in the morning - I just eat one straight out of the bag.)

    For the Christmas party I plan to bake sugar cookies, chocolate chip cookies, and brownies for sure. (I'll also do a bunch of chocolate things like truffles but that's not really "baking" - although if anyone says it is baking, I will revise my statement and include those in my count!! )

    I am also planning to make pita bread and breadsticks for the party. I've made pita bread a million times before and it's incredibly delicious - bears no relation to storebought which I hate. Breadsticks will be new for me - the challenge will be to get them crunchy without burning them!

    I keep going through recipies and cant decide what I want to make. I wanted to make pumpkin muffins, or the like to use up pumpkin from the freezer. I guess I will have to make my mind up soon.

    I went to CVS and got kisses to make Peanut Blossoms but that is about it...have big plans tho...list is long..will see how many I actually do make..my problem is I eat too much when I bake..

    Does it count if I make homemade chocolates? I'm in the process of making chocolates. I've made the chocolate, now I"m just waiting for it to harden, and then I'll cut it out with cookie cutters. I'm so crazy proud of how AWESOME my chocolate looks, that I HAVE to show it to you guys and brag about it.... (and yes, there was too much spoon licking going on, I think I'll be skipping dinner tonight!!)

    Step 1: melt milk, dark, and white chocolate in bain marie (separately).
    Step 2: pour onto a baking sheet.
    Step 3: make it beautiful!!
    (Step 4: stamp out shapes with cookie cutters, it has to dry first, I'm sure they're going to be awesome though!!)

    This is going to go on the dessert buffet and in the gift bags for our Christmas party next Saturday



    and because I couldn't leave well enough alone...

    I cut out the stars and they look awesome!! I'm so proud of them! It was the easiest thing ever, but the results make it look like it was so hard

    It's not letting me edit my earlier post - I baked something else - I'm on a roll today!

    5. Sugar Cookies with Royal Icing
    6. Grissini (Italian crispy breadsticks)

    I made four varieties of the breadsticks: plain, white & black sesame seeds, poppy seeds, and rosemary & flake salt. They're sooo pretty - these are for the party too, so I don't know how they taste.

    Yesterday I made truffles, so:

    1. Blueberry Cornmuffins
    2. White chocolate, Geranium, & Almond Muffins
    3. Cinnamon-Raisin Muffins
    4. Tri-color Chocolate Stars
    5. Sugar Cookies with Royal Icing
    6. Grissini (Italian crispy breadsticks)
    7. Truffles (dark chocolate mandarin, dark chocolate mint, dark chocolate & chestnut creme, and Oreo balls)

    Today I'm making cheese triangles in phyllo dough (it's a Greek thing called tyropitakia if you've heard of it!) - soooo dangerously delicious but takes around 4 hours because I'm making individual triangles and they take f.o.r.e.v.e.r!

    I'm also planning to make white chocolate truffles with coconut and lime today if I have time / am not exhausted!
