*5 Skillet Fried Chicken Breasts (these are actually quarter pieces because I cut them in half thickness wise to cook then I cut them in half again to freeze) - used 2
*2 Morning Star Farms Chikn Patties - used 1
*2 Buffalo Bean Patties
*4 Servings Chicken Fajitas
*4 Servings Fajita Veggies
*1 Link Mild Italian Sausage
*4 Egg Rolls
*Small baggie of Manwich Sauce
*Small baggie of Diced Tomatoes
*Half a baggie of Crushed Pineapple
*2 Deli Hoagie Rolls - used 1/2 of 1
*4 Hot Dog Buns - used 1
*2 Hamburger Buns
*Tiny bit of Sauteed Spinach
From the Deep Freeze:
*2 Whole Wheat Pita's
From the Fridge:
*4 Hot Dogs - used 1
From the Pantry:
*2 Boxes Macaroni and Cheese (regular powder kind)
*2 Boxes Shells and Cheese
*1 Can Spinach
*1 Can Asparagus
*2 Cans Carrots
*2 Cans Corn
Yesterday I used one hot dog and bun.CHALLENGES:
No Spend Days - Goal = 286 Days (days met - 27)
Eat Out No More - Goal = 353 Days (days met - 41)
Menu Planning - Goal = 52 Menus (menu's to date - 7)
Meatless Dinner 1x's A Week - Goal = 52 (dinners to date - 9)
Pantry Inventory and Menu Planning - Goal = Rotate as much inventory as possible
Waste No More Food (approx. wasted dollars to date - $30.29)
Grocery Budget Reduction
January 2012 Goal = < $320.00
To Date: = $254.74 MADE GOAL!!
February 2012 Goal = < $320.00
To Date: = $66.04

still working on leftovers and odds and ends in the fridge...but getting there!
ate the last of the leftover spaghetti for lunch today
ate some of the baby carrots
tonight is probably going to be breakfast for dinner...will use up the leftover sausage in the fridge

So excited that I actually used something I had to post before the day is even over!
I killed three birds with one stone...I used a box cake mix and the last of a baggie of Craisins and the last of a baggie of Mixed Dried Berries as well as some Oats to make Cake Mix Oatmeal cookies.
Then I discovered that the TWO whole wheat Pita's was actually THREE <sigh> but I ended up using one to make Pita Chips with and finished off a cheesy spread I made the other day and plan on using another one for a Pita Pizza tonight.CHALLENGES:

WOW! I'm on a roll today!! I didn't make the Pita Pizza tonight but instead finally finished off the last MSF Chikn Patties that have been hanging around forever! Also finished off the pizza sauce from last weekend to dunk it in.CHALLENGES:

Used up a smoked brat and had them with hm pasta, spinach, broc and peas.
Tomorrow I'm making multiple meatloaves using the very lean beef, lean venison, not so lean Italian sausage and not so lean turkey. One would expect ground turkey to be lean but the fat content is on par with the pork sausage.
I hard cooked eggs to stuff inside the meatloaf and will be adding sauteed onion, carrots, celery, flax seed and oatmeal to help add veggies, fiber and flavors.
For shaping tomorrow I think I'll mold them in my smallish loaf pan and turn them out onto a cookie sheet for baking.
Lets hope they turn out well, we're having company. LOLThe Free Spirit Saver who walks the path with Greebo.

Used up: four frozen pork chops from April, yup, 2011. . . snap peas from freezer, one quart of our butternut squash that I pressure canned into about a zillion quarts. And now DH says it 'tastes funny'. *sigh* Also used a can of chicken stock, a lemon (peel and all!) and some maple syrup.
Vermont has two seasons: Wintah and the Fourth of July.

Used a couple pounds of hamburger up, some French fries, mushrooms, and an onion. Also part of a tomato and some lettuce, and dilled carrots and beans. Also made a trifle with some failed chocolate cupcakes, raspberry sauce (used up raspberries) and chocolate pudding (used up a can of coconut milk).

Made rolled -up lasagna tonight. Served with gorgeous asparagus in a butter/lemon juice sauce.
Used up: leftover browned pork sausage (from calzone the other night), two frozen servings homemade italian sauce, small can mushrooms.
Used: cottage cheese, ricotta, some block parmesan, 2 eggs, some lasagna noodles, one bunch asparagus, one lemon.Vermont has two seasons: Wintah and the Fourth of July.

finished a pack of crackers
finished bag of tortilla chips
leftover sausage from the fridge
leftover bacon from the fridge
loaf of bread
finish pizza from yesterday for lunch today
leftover mac and cheese will be eaten at lunch
that should empty my fridge and now maybe I can start working on the freezer

back again

dh wanted more buffalo chicken dip for lunch (we ate it for dinner last night) and kids weren't really hungry today so we just munched on a bunch of different stuff.
stuff that we used up that wasn't listed above:
finished off 2 different bottles of hot sauce (dh couldn't find one and had opened a second..hate when he does that)
finished off a bottle of ranch
the last pack of cream cheese in the fridge
a container of cheddar cheese
the last bag of chips in the house...yay glad they are gone!
2 more cans of chicken from the stockpile
kids finished the half a bag of baby carrots left for dinner
dh cooked more sausage he got for dinner
used up a bag of hot dog buns
and forgot to add the kids ate a can of mandarin oranges from the stockpile this afternoon
the only leftovers in the fridge are what dh is taking for lunch and some of the buffalo chicken dip. going to take advantage of the empty fridge and scrub down the shelves tomorrow.

We used up:
package of sausage from the freezer
good chunk of the powdered milk
several tablespoons of lemon juice - the lemon juice is getting close to the expiration date and so I have been using it to sour the milk for biscuits
the remainder of a container of sour cream - I dumped it into our sausage gravy.Beak-1996, Toad-1998, and Q-1998
