Hey, KimZ, how about borscht (beet soup)? There are all kinds of versions of it. I have one without meat somewhere. Personally we'd just heat them up and eat them with a little butter, salt and pepper.

Tonight I had the clam sauce on spaghetti squash. Used up the last can of clams, a pound of frozen tomatoes, and a package of frozen spaghetti squash. Also made a coleslaw using some leftover napa cabbage, carrots and golden raisins.

I was going to have chicken quesadillas and spice the chicken with salsa, but DH has eaten most of the salsa. I made it with a packet of taco seasoning and the rest of the jar of taco sauce instead. So...

Yesterday, I finished up a lb. of hamburger from the freezer. A can of sloppy joe mix, all but 2 hamburger buns. Today, I finished up the last of a pot of pumpkin spice coffee which also finished off the bag of coffee. Oh, and I just noticed that we finished the bag of chips that I served with the sloppy joes.

Little by little, the fridge, freezer and pantry are getting used up.

Dinner is soup from leftover roast bits from several meals and a handful of potatoes and carrots. We will have leftover breadsticks on the side.

Lunch was pizza bagels using leftover spaghetti sauce and leftover mozzarella.

Used half the home-grown sprouts along with random loose veggies from fridge, feta and a can of black olives for dinner last evening... so good I think we'll repeat tonight, maybe with some soup - it's FREEZING today. Taking leftover casserole for lunch.

Last night I used a bag (expiration date October 2011) of mixed vegetables from the freezer. They were fine. Of course, if DS had seen the exp. date he would have refused to eat them, so I made sure the bag was trashed before he came in the kitchen....
