    I made Crunchy Green Tahini Salad yesterday. It's basically kale with a tahini lemon dressing. It's so good I made it again today, and now I'm all out of kale. I think I've found a new favorite salad and a new way to eat kale. (The recipe was from Vegetarian Times magazine, Sept 2011 issue.)

    I've got pork chops and some beef stew meat thawed. Need to find an quick an easy recipe to try for either of these so I can get in my new recipe for this week.

    South western pulled pork - was pretty good.

    Italian beef sandwiches - dh really liked. I felt it wasn't spicy enough.

    We will make both again.

    I cooked with tofu tonight for the first time. Made stir fry with it, dd and I didn't like it much but dh liked it. Don't think I'll be buying that again.

    Tried 2 recipes that I thought I could bring to a Super Bowl party; I decided I'd better try them first. (Good plan!) First I made black-eyed pea croquettes from a cookbook I had. I don't know what I did wrong, but they wouldn't hold together so it was a real mess trying to fry them. Serves me right since I really shouldn't be making fried food.
    Today I made spinach-artichoke dip from a recipe I found on Spark People Recipes. This was really good and I didn't have any parmesan cheese, which I think would make it better. So I'll be getting more ingredients and making that for the party, but the croquettes, um, no...

    I signed in for January for one a month but lost the thread.
    Jan I made roasted potatoes with my own seasonings, not bought for the first time. Smoked paprika & garlic powder. Love smoked paprika.

    February made the Santa Fe chicken enchiladas on the back of the Philadelphia Soft Santa Fe creme cheese. If you follow the recipe totally it makes about a dozen and that's not skimping on the filling. The only thing different I did was to dice up a little red and green peppers to add. Topped with the shredded Mexican 4 cheese which is what I always buy any way but wished I'd had green onion to add to the topping.

    Definitely a keeper.

    I made 2 recipes yesterday that are now in my Favorites binder:

    1. North African Chickpea & Kale soup from the Fat Free Vegan website
    2. BBQ Chicken Pizza (California Pizza Kitchen clone) from Tammy's Recipes website. I used Gardein chick'n scallopini instead of chicken breasts to make it vegetarian.

    Yesterday I tried a bread pudding recipe that was very good. I usually just wing it when it comes to bread pudding. This will be a keeper. Also made Oatmeal Apricot Bars. Haven't tried them yet.

    I made a new recipe yesterday - Pan Fried Kale, Tofu and Stir-Fried Noodles. The tofu was freakin' delicious. I didn't have rice noodles so I used udon noodles.
