DH's still out of town and I've been sick the whole time he's been gone. Almost everything I've cooked has gone right back in the freezer so no real "plan" other than to use up freezer stuff. Things to choose from next week include:

    Bean Patties
    Fried Chicken Breast
    Chicken Fajita's and Veggies
    Chili
    Pork Chop
    Chicken Reuben
    Chicken Noodle Soup

Default Late to the Party - Menu Plan Feb 13-19

I am late to the party as I just discovered this website. So awesome to have a community of like-minded people to exchange ideas with!

My hubby works M-F about a five-hour drive from our home in central Alberta, and spends weekends at home, so I pack a cooler full of lunches for him to take with him for the week.

Anyways, I have been menu planning off and on for years, so I will jump right in and share mine for this week. This is dinners only, although I do plan lunches, desserts, and snacks as well.

    February 13-19

Monday - Mac-n-Greens (penne in cheese sauce with broccoli, asparagus, or chard, or combination of)

Tuesday - Vegetarian Black Bean Chili over Fried Cheesey Polenta

Wednesday - Lentil Loaf, Mashed Potatoes, Steamed Veggies

Thursday - Veggie Pot Pies and Green Salad

Friday - Thai Coconut Curry Tofu & Veggies over Basmati Rice

Saturday (Family Night) - Homemade Thin Crust Pizzas (one a traditional [soy] pepperoni, mushroom, green pepper and olives; the other a mixed mushroom with bechamel sauce), raw veggie plate with hummus

Sunday (Lazy Night) - French toast, orange slices, soy sausage

I'm going to start doing this starting Monday. In the past I always made menus for the month but got out of doing that. Now I'm stressed out everyday around dinnertime trying to come up with something to make that everyone will like.

    Makes grocery shopping easier too.
