meatless dinners
We are doing more meatless meals this year for our health and our budget
Here's my plan: Meatless Monday- Tuna Tuesday- Fish Friday- Sunday pasta Day. On the other days I fill in with what's on sale and healthy
I've been adding spinach to everything. We have it cooked and raw. I use it in salads with fruit, nuts and beans. We have been loving this
I also started making sourdough bread, yum

Tonight I made cheese raviolis (store brand frozen) with a veggie-licious sauce. I sauteed a box of thawed chopped spinach with olive oil, minced garlic and onion. Then I added diced canned tomatoes and about 2 cups of a spagetti sauce and a can of cannelli beans. It turned out great!

We had mac & cheese and Brussel sprouts the other night and tonight is Vegetable Soup. I am using broth made from boiling down some chicken bones but there won't be any pieces of meat in the soup.

Leek and potato soup with rolls tonight...it must be going well, hubby still hasn't noticed we're meatless 1 night a week!

I've mentioned it a few places but my DH is doing a veggie shake mean green cleanse, going on day 24 right now. Before that we were eating meatless quite a bit. With it being the dead of winter vegs n fruits are at a premium so I've been eating as cheaply as possible to compensate. This site has been a lifesaver. Crockpot is my fave way to cook and this has both a veg and an economy section.
