Homemade Fruit Roll Ups
I ran across this recipe in an Amish Cookbook my mother gave me recently. I haven't tried it yet but plan to add it to my next meal plan.
Fruit Roll Ups
1 (3 ounce) packages gelatin (any flavor)
1 cup boiling water
3 cups miniature marshmallows
Combine all ingredients in saucepan. Heat and stir until marshmallows are melted. Pour into 9x13 pan or small cookie sheet with sides. When firm cut into strips and roll up.

I make homemade fruit rollups, but they are actually made of fruit. The kids go crazy for them. Just chop up apples, cook until soft, purée until smooth. Then spread thinly on dehydrator trays or on cookie sheets lined with plastic wrap. Dry about 12 hours at 150F.
They come out like fruit rollups, not fruit leather (which my kids won't eat), I'm not sure if it's because of the pureeing or because I don't spread it too thickly.
I have to ration it out or they would eat the whole batch as soon as it comes out. One day I wasn't guarding the dehydrator and when I went to shut it off it was already empty.
