    Default Amy's Breakfast Muffin Recipe Question

    Just curious who has made this recipe & when you added the "additions" ie. moist additions, dry additons, wet additions etc how much of those did you add? I haven't yet tried her recipe, but I'm going to very soon ... I loved all her other recipes so far ... so anyways any tips on the muffin recipe would be greatly appreciated!! Thank you

    oops .. i just read up to 1 1/2 cups of the additions ... sorry!! missed that the first time .. anyways any tips from anyone who has tried this recipe would still be greatly appreciated

    Ok it's tried, tested & true.

    I have baked 3 batches of muffins now and all 3 came out well.
    1. Oatmeal apple cinnamon muffins
    2. Apple Cinnamon muffins
    3. Chocolate Chip Muffins

    Just watch that you have the right "muffin consistency" & you'll be fine!! I look forward to experimenting more. If your hesitant like I was .. then try 1/2 batch first. But I strongly recommend it yummy!!

    One thing, does anyone have an idea how to get the muffins to not stick in the paper muffin cups - minor detail, but would be nice if they just came out nice.

    I made them too...I used chopped apples and some applesauce and the spice was cinnamon...the kids loved them - I also sprinkled a little sugar and cinnamon on top of the muffins before baking. I used muffin papers (liners) though and they stuck a little so I think next time I make them I will just spray the pan (like Amy suggested). They froze well too - so the kids took them to school in their lunches

    Mine stuck last night a little .. but this morning they came out fine ... so I think they just have to cool completely to not stick ... i love that recipe!!

    mmm that sounds like a good idea .. was meaning to do that with my last batch but forgot .. f

    For my apple cinnamon ... I used apple juice as the liquid, apples for the extra ingrediant and sugar & molasses for the sweetener i also did half w/w and half white flour

    I've made them...a lot. I make blueberry/lemon muffins, blueberry/cranberry/walnut, and mango muffins. I eat very healthy, so I've done a lot of adjusting to them. I've put in mango or applesauce in place of fat. I've used stevia or Splenda in place of sugar. I've used Rice Dream in place of milk. I use mostly half white and half whole wheat flour. They're all yummy. Sometimes I do a streusel topping, but more recently not. I'm supposed to be off sugar. Though you wouldn't know it this time of year!
