Help - Food ideas for on the road.
OK - I have appointments every Tuesday at 12 noon. I live about 45 minutes from the place where I have to go. It's so easy for me to pick something up like BK or Subway and then go to the appt. How and what could I do/bring that would keep me from going fast food?
Ideas please.

I would probably just eat something at home at about 11:00 am, so I wouldn't be hungry, then take a snack (apple or some carrot sticks) along with me.

I agree with Madhen. Also, I like PB&J sandwiches, because they are yummy, have protein, and I don't have to worry about them going bad really fast like I would with a sandwich that had mayo on it.

I would cut up something to snack on like carrot sticks or cheese and crackers. Something easy but enough to fill me til I got home.I work as a sales rep and Im on the road most every day. Its real easy to go fast food...but it gets old real fast too. I have come to hate most of it and I really enjoy something I can just snack on all day if I want.

Sorry, forgot to mention I am Diabetic and have to take insulin. I try to eat at about 11:30 to 12 everyday lunch. I have to check my sugar and take insulin depending on what my level is.
I guess eating at 11am is an option but I would be eating and then running. Any other ideas?

what about the pb&j suggestion?

When I'm driving I pack bentos and fill them with finger foods. Cut sandwiches, fruits, and veggies. You could add chips and stuff too. Here's an example of one of my road trip bentos. You obviously won't have to make it all cutesy

I'd go with the pb&j. I keep frozen pb&j sandwiches, and grab one if I need a quick lunch option. If you took it out of the freezer when you left your house, it would be thawed and ready to eat in only about 10-15 minutes.
Or you can do a pb and banana sandwich, any cold leftovers (i.e, make a chicken salad), tuna salad with some celery and/or zucchini sticks to go with it, a couple of slices of bread with just butter on them, or a sprinkle of sugar/Splenda/etc and cinnamon. I also like Morning Star chik patties. I bake those up as per instructions, put them on hamburger buns with a bit of mayo and catsup, and take those to work for lunch.DH aka Mad Hen

what about meat salad sandwiches? (ham salad, tuna salad, etc.)
You get the protein you need, a little fat (mayo), and bread is carbs.
Have some crudite' on the side & you got yourself a nice little meal.
What about turkey sandwiches? Add cheese, mustard, veggies (lettuce, tomato, onion)... use a wrap or pita if you eat & drive (be careful!!!).
Try egg salad or hummus as well. Add bean sprouts, lettuce, raw cabbage, julienned carrots, celery... whatever!
there's also celery & pb.
apples & pb as a snack.
think fewer simple carbs, but many veggies are complex (think - raw!) and add protein and your diabetes should be pretty even keeled.

Could you make a smoothie to bring with you? I don't know if you have protein powder or anything (it's not cheap, but the whey kind is not too bad), but add that to some skim milk, some PB, and a banana, and that would be enough to keep your blood sugar steady.
A cheese stick is one of my favorite take-alongs. There's GORP. Making my own is cheaper and it's not as salty. A hard-boiled egg? Egg salad on whole wheat bread? Make your own Egg McMuffin? I will poach an egg in a little custard dish (spray with cooking spray and microwave on low power), and it's the perfect size to put on an English muffin. Add cheese and presto!

Nuts
cheese cubes or sticks
peanut butter on whole wheat bread or crackers
cheese and whole wheat crackers
veggie sticks
fresh fruit
a container of canned fruit in fruit juice
What about taking a small cooler? In the summer, we always take a small cooler with extra water bottles (filled from our reverse osmosis filter). We have some of those blue ice things that we throw in to keep it cool.

Hmm...don't know anything about diabetes, but what about whole wheat bagels and cream cheese? Or some such. Another thing I do is whole wheat bagels with homemade dilled hummus (no fat in it). And I take vegetable sticks too. I've also been known to do the crackers and cheese route. And grapes or fruit. I've also done gazpacho and put it in a thermos.
