Easy inexpensive recipes.
crockpot pork and potatoes
1 box scalloped potatoes
1 box au gratin potatoes
4-5 pork chops
milk,water, butter per box instructions
stir all together in crockpot and tuck in the pork chops
cook on low 6-8
mac n cheese/ham
2 cups uncooked pasta
(cooked and drain)
3/4 c velveeeta
2/3 c mild cheddar
1 c milk
(melt together on low)
1 c diced ham
stir all together

Crockpot Mock Steak
I use cheap chuck roast cut up for this but you can use steak if you have it, pork cubes are also good.
brown bite size pieces of meat
in crockpot combine meat,1 onion chopped,1green pepper chopped,2 cans diced tomatoes with green chilis(I can my own), 1/2 cup worchestershire sauce, 1/2tsp ground ginger, 1-2 cups water
let cook for 6-8 hours serve over rice or noodles.

I made the box potatoes and pork chops yesterday. It was so good! Even my husband who likes things spiced up a bit enjoyed this wholesome "comfort food"!

I'm going to have to try the pork chop recipe. Dh is the stay at home parent here, and anything I can do to make it easier for him to get dinner on the table while chasing our 3 1/2 year old and 17 month old boys is a plus.

I just found a cheap meal: waffles with peaches and cream. To make syrup just drain peaches and thicken with cornstarch and maybe some cinnamon.

I make the exact pork chop recipe except I bake it in the oven - I just lay the chops on top of the potatoes - my family does love it!

I've just recently started working til 5pm again so I've been using my crockpot at least once a week.
I'm a meat eater so all of these contain meat yet I do buy the "cheapest" meat available.
chicken quarters (leg & thigh) have been the cheapest chicken $.79lb.
So anyway, the absolute easiest, put chicken in crock pot, add a jar of sauce, cook on low for 6-8hrs, serve over noodles with a side salad. You can also throw in some carrots or potatoes or other vegetables if you want, just slice them on the thin side (I have a problem with hard veggies not cooking if you make the pieces too big)
dried shitake mushrooms, slice an onion thin, chicken, 1/2 cup cooking sherry, 1/2 cup chicken broth. cook on low 6-8 hrs serve over rice (the dried mushrooms are for flavor, a small package was $2.99 but I only used about 1/3 of the package. You could probably use fresh mushrooms or even canned mushrooms which would cost less)
This week I bought a small pork roast for $6. Slice potatoes 1/4" -1/2" thick put on bottom, add one can of sauerkraut, put pork roast on top. cook on low for 6-8 hours.
I learned a little trick from my ex husband (believe it or not), I set everything up the night before and put the inner ceramic dish in the refrigerator overnight. In the morning I just take it out of the fridge, put it in the heating part of the crock pot and turn it on. Doesn't get much easier than this.Judy
