Cooking class part 3
Baking basics
I learned to make white and wheat bread, a basic muffin recipe that you add various fruits or nuts too (depending on what you want), cinnamon rolls, cornbread, and sugar cookies. The cornbread is much better than the pans of it I used to buy from the Kroger bakery.
Now as for shopping and trying to cook more, that is by the wayside for the next two months. It is UIL One act play season.
So rather than having pizza 4 nights a week, I went to Kroger and bought easy to heat things. They had these bags of pre-cooked chicken breasts on clearance (8 breasts for 5.99). So I bought a bunch of them (3 bags). At 2 chicken breasts a meal, that is not bad. Also, I bought a bunch of the steamers that were on the buy 10 get 5 dollars off sale. I can pair the chicken with the steamers, make a salad, and have dinner in 10 minutes.
Today, I am maming a big batch of jambalaya (Zatarin's mix was on sale) with marked down turkey sausage. I am adding extra rice because it is too salty otherwise. I am also adding a diced onion, bell pepper, and celery. This will be another easy meal to reheat this week.

Can you share the cornbread recipe? I never have much luck with it.
The rest of your dinner plans sound great. Not every meal has to be a big production from scratch every night. I "just reheat" things a couple nights a week myself. And do the same thing with the Zatarain's mixes. They are so heavily seasoned you can really stretch them.Use it up, Wear it out,

They are really teaching you a lot. I wish they had something like that around here, because even though i cook well I think I could always learn a few things.

I'll share mine, but so I don't hijack the thread, I'll put it in the Community Cookbook. I love "my" corn bread recipe. It's from the 1989 Better Homes & Gardens cookbook (I have a newer version, and I've found some recipes are different, or left out altogether).

I would love the bread recipes!!! White or wheat it doesn't matter. Sounds like you are learning a lot, way to go!!

Personally, I think that the biggest hurdle in cooking/baking is just getting over the mindset that it's overwhelming or hard to do. That's the nice thing about in-person classes... once you see that you can do it, you're motivated to do more.
