I just use a juicer, which doesn't help you.
As per Ball Blue Book, 24 pounds of apples + 2 quarts of water. Chop up apples, add water, cook until tender, stirring to prevent sticking. Strain through damp jelly bag or several layers of cheesecloth. If canning, heat juice just to boiling, add to hot jars, leaving 1/4" headspace. Process 10 min in bwc.DH aka Mad Hen

~I think the boiling water when I cook down apple cores to make applesauce makes a great apple juice!
If you don't have a food mill, get one! They're about $20 new or $5 used(if you can find one!). My mom found mine at an antique store/junk shop.
Wash your apples well and cut into chunks seeds and all. Place chunks in large pot and cover with water.
Cook covered medium low until tender(20-40 minutes). Cool 10 minutes.
Scoop out apple chunks into food mill and crank over a large bowl. discard seeds and peels.
Now you have applesauce!
Strain cooking liquid into a pitcher. Sweeten if desired. Chill well.~~Constance

I second the Ball Blue Book - or the National Center for Home Food Preservation - http://www.uga.edu/nchfp/how/can_02/apple_juice.html.
Be sure to avoid methods that make raw (unpasteurized) apple juice or cider. http://www.emaxhealth.com/75/15996.html

Yeah, that unpasteurized stuff can ferment quickly at room temperature and before you know it your kids are drinking applejack. Heh.

You can make apple juice concentrate by boiling down cider that you buy in the store or from a farm. Just place in a pot and boil down until the juice is a bit thick and it will taste very strong, (this takes a long time) you can add sugar, cinnamon sticks and/or cloves to it if you like. I use this concentrate to flavor apple pies and all kinds of desserts as well as a syrup.
