Shepherd's pie would be best without the baking mix mixed in next time. We just use mashed potatoes spread on top as a topping, and it's yummy. If you put the baking mix in, it's going to be heavy and dense, I think.
I created Thanksgiving Shepherd's Pie after making a turkey one time, and now the family loves it, and asks for it. I put leftover turkey or chicken mixed with gravy on the bottom, topped with leftover stuffing, then leftover corn over that, and then spread leftover mashed potatoes on top, and baked it all together. They love it! I usually serve cranberry sauce with it.
You could switch the stuffing layer to the bottom so that it's more crispy if preferred.
