    Default Need creative frugal recipe for leftovers

    I have miscellaneous small leftover items in the fridge that I would like to put together for one meal to finish up. The approximate measurements are:

    2 C mashed potatoes
    1 C broccoli pieces
    1 small boneless pork chop
    1/3 C carrots
    1/3 C corn
    1/2 C tomato sauce

    If anyone has any ideas on how to use these up for our dinner tonight, that would be great! You guys are so creative in using things up.

    How about potato pancakes, and make a pot pie out of the rest.

    I have never made potato pancakes before, although I could make an attempt. I don't believe I have the fixings to make the crust of a pot pie.

    I have no shortening for the pie crust. Would using bread (I have both white and whole wheat) work at all?

    You can also just make a cream base for the pot pie and top with biscuits.

    potato pancakes: add 1/2 cup biscuit mix and 1 egg to your 2 cups of potatoes. Add a sprinkle of thyme or parsley if you like. Mix well. If the mix is too wet you can add more biscuit mix. It should be just dry enough to hold its shape. Make patties and fry them in butter or cooking spray until golden and crispy and hot through. Centers will still be soft.

    You can also use biscuits (home made or canned) as pot pie crust. Or just ladle the stew-like filling over biscuits. I do that when I am too lazy to make a crust. You can also use the mashed potato as a topping.

    You could cut up the pork chop, mix it all up (except the potatoes), top with potatoes and bake for a shepherd's pie. A little cheese on top wouldn't hurt, but if you don't have any it'd be okay without.

    I see a casserole topped with mashed potatoes!
    the veg's & pork, chopped/minced, added into a tomato/water or tomato/cream (or milk) base w/mashed potatoes on top, throw in oven for no more than 15 or 20 minutes, you gotta meal!

    I would turn th all the veggies and meat into a sheppards pie. the take the spag sauce and turn sliced bread into garlic toast (top with cheese make it pizza bites) and use sauce for dipping.


    OR

    Food processs all your veggies (omit the mashed) into a fine grind and thing incorp into spag sauce, serve over pasta (I would bake it) ****I did this one night with peking stirfry veggies in my spagheti It was delicious! Serve the pork on the side.

    OR

    Use the spag sauce as a base for a hardy veggie stew you could throw the pork in there for good measure!


    Turn your Mashed potatoes into dinner rolls or bread! Hope this helps!!!!!

    Yep, shepherds pie was the first thing that came to my mind also. If you have pasta, you could cook up a little and mix with the tomato sauce. It's simple but tasty. Oh and broccoli mashed up in mashed potatos is pretty good.

    Well, I ended up mixing everything (except the mashed potatoes) and putting in a casserole dish. I mixed the mashed potatoes with bisquick and an egg, and I put it on top. I baked it. It was okay. Not too bad. I think next time I find I am in a similar situation, I'll try the potato pancakes instead.

    I'd put it in a shepard's pie. You can make pie crust with salad oil!
